about brand chef
Glen Ballis is one of the leading chefs in Moscow. His distinctive style is refined comfort food with a focus on quality ingredients. Originally from Australia, Glen began his career in Russia in 2007, working at Arkady Novikov's restaurant "Nedalny Vostok." Today, Glen Ballis is the head chef and co-owner of Glenuill and Margarita Bistro in Moscow. In addition to this, he oversees the kitchens at Medusa, Magura, and Avocado Queen, serves as the brand chef for Kuznya and Nama restaurants in St. Petersburg, and owns three restaurants in Singapore.

The new level, designed for 100 seats, has finally opened its doors, immediately transporting guests into the enchanting world of Pan-Asian cuisine with mysterious bars and local dishes. The intimate atmosphere of these secret luxury spots is created with mother-of-pearl finishes, sakura blossom motifs, exotic wood, and lamps reminiscent of sunset shards, along with a long bar illuminated by golden neon lights.

The Escape Asia level immediately transports guests into the enchanting world of Pan-Asian cuisine with mysterious bars and local dishes. The menu features the diverse flavors of Asia, from the shores of Japan to Korea and Singapore. In addition to Japanese classics like rolls, sashimi, and gyoza, there are unique signature dishes created by chef Rustam Samedov. It's gastronomy designed for warm gatherings and leisurely conversations.
