Originally from Australia, Glen began his career in Russia in 2007, working at Arkady Novikov's restaurant "Nedalny Vostok." Today, Glen Ballis is the head chef and co-owner of Glenuill and Margarita Bistro in Moscow. In addition to this, he oversees the kitchens at Medusa, Magura, and Avocado Queen, serves as the brand chef for Kuznya and Nama restaurants in St. Petersburg, and owns three restaurants in Singapore.
